About: La Encanada, “the ravine”, describes farmland alongside the Tonchima River, which passes between two mountains. The Mestanza family employs 50 individuals to produce this coffee with organic practices, using only natural fertilizer. The fields are shaded by leafy guava trees, which provide an additional source of enrichment as leaves fall to the ground. After harvest, coffee is dried in the sun using solar tents.
